Holiday Cookie Recepies

As the holidays are on us everyone throws their parties, and family comes over la de da de da. I've been doing some baking and thought i might share some of the cookies that I've been baking for anyone who's brave enough to try it on their own(assuming i give clear enough instructions) . Feel free to share your own recipes and maybe ill try them.

Squish Cookies (My Favorite)

Ingredients:
- 1 6 ounce bag of chocolate chips
- 2 cups of flour
- 2 teaspoons of baking soda
- 2/3 cup of soft butter/margarine
-1/4 cup of light corn syrup
- 1 egg
- 1/2 cup of sugar
- 2 boxes of thin mints (not girl scout cookies)

Instructions:
-Melt the chocolate chips in the microwave
-Mix in the flour, baking soda, butter, corn syrup, egg, and sugar
-Make sure everything is well combined (i use my hands for this part)
-Either cover the bowl its in and put in in the fridge for 2 hours, or move it to parchment paper and put in in the fridge for 2 hours
-Make 3/4 inch balls (i used rounded half teaspoons)
-Roll in sugar, do not flatten
-Bake at 350 for 10-12 min on an ungreased cookie tray
-Place on cookie sheet while still warm, match cookies with another one about the same size and flip one half over (this will be the bottom)
-Place 1 thin mint on each of the overturned half, cover with the other half and let sit for 30 sec-1 min
-Gently squish down on the top so the two halves stick, and let cool
-Enjoy

Double Chocolate Crinkle Cookies

Ingredients:
-1 3/4 cups of flour
-1 teaspoon of baking powder
-1/2 teaspoon of salt
-1 stick of butter
-1 cup of sugar
-2 eggs
-2 ounces of unsweetened chocolate (melted and cooled)
-1/2 cup of semi-sweet chocolate morsels
-1/2 cup of powdered sugar

Instructions:
-Combine flour, powder, and salt
-Beat butter and sugar till smooth
-Add eggs and beat till smooth
-Add chocolate and beat till smooth
-Add flour mixture and beat till smooth
-Add chocolate morsels and mix
-Cover and put in the fridge for 2 hours
-Shape into 1 inch balls (again i used a rounded 1/2 teaspoon but with a bit more)
-Roll in powdered sugar
-Bake at 350 for 10-12 min on an ungreased cookie tray
-Let cool on a cooling rack
-Enjoy

Snowball Cookies

Ingredients:
-1 1/2 cups (3 sticks) of softened butter
-3/4 cup of powdered sugar
-1 tablespoon of vanilla extract
-1/2 teaspoon of salt
-3 cups of flour
-1 2/3 cups (10 ounce pack) of chocolate morsels (use red and green if you can find them to make me more festive)
-1/2 cup of finely chopped nuts (optional)
-Powdered Sugar

Instructions:
-Beat butter, sugar, vanilla extract and salt in a large mixing bowl until creamy
-Gradually beat in four
-Stir in nuts (optional) and morsels
-Shape level 1 1/4 teaspoons of dough into 1 1/4 inch balls (size really dosen't matter as long as they're all near the same so they take the same time to cook)
-Bake at 375 for 10-12 min on an ungreased baking sheet
-Sprinkle powdered sugar over them as soon as they come out
-Let cool
-Enjoy

I baked the Snowball Cookies a few nights ago based on your recipe and my cousin's recipe. Super delicious! :D
