is there/will there be any other way to use them or is the token shop it, thats all we can use them on

The only way you can use your tokens is in the 'token'shop.   You cannot earn tokens no more, so they will most likely not be another way to use them.  (Tokens were made to give you a 'head start' in v6)

Any idea of how much longer the token shop will be up?

I wish. The only thing in the shop worth buying was Vampi.
