If the online servers are down or in most cases unplayable due to the latency to the Us or EU I normally switch to any offline game available. Or I spend the time with my wife, which basically also means gaming other games via LAN together (provided that her beloved WoW suffers from the same lag). 
What I definitely try to prevent during any server downtime is going outdoors (the outdoors kills people - never go outdoor if you can prevent it!) ;) If you really need to see the outdoors buy a fishing simulation or watch the discovery channel.

In the case that you and your friends share the same interrests there is always the possibility to skip the usual loud music, alcohol, chips and "embarrasing fotos that should never have been brought upon this world" routine for something else.
If you for example like acting you and your friends might enjoy a trip to one of the big theaters (the ones with tuxedos, ties and definitely NO popcorn).
Or if you enjoy the arts you might also enjoy a trip to some famous museum (although I find these museumtrips quite tiresome (at least until everyone is in position and we can pull of the heist)).
And then there is always the nerd-solution of having a LAN-party with coke and selfmade pizza (being a girl is no excuse for not being a proper nerd these days).

The problem is that this will only work with a few close friends and shared interrests, people who are expected to invite half of their school as friends might be restricted to the classic houseparty drill.

Of course these ideas might be not suitable nowadays, my experiences with "getting 18 partys" are - well - literally "last century".

You already might have the "minecraft-1.1.jar" in your ".minecraft/bin" folder (with Win7 it`s normally under C:/user/username/appdata/roaming/.minecraft/bin). I never made the backup but nevertheless had that backup file included in my folder, so it either came with the game itself or was created by the mcpatcher.

To downgrade you might try to replace your minecraft.jar with the minecraft-1.1.jar by renaming that file (but don`t forget to make a backup first).

I can`t promise that it will work for you (so you better make a backup  of the .jar files before trying).

[Win7] Go to the .minecraft/bin folder. Then make a copy of minecraft-1.1.jar and rename it minecraft.jar (replacing the actual minecraft.jar).
