So tell me is harvesting someone's crops and then replanting it considered greifing?

PS: there "farm" is about a 64x200 farm area all full with wheat and i had no food or farm)

Yes. Yes it is. Taking something without permission is griefing, wheat/farm or not.

You took up their valuable time because they then had to wait for their crops to regrow, stealing the money they would have had with that harvest.

UNLESS it says something along the lines of... "You can take but please replant" or "Free wheat!!! But replant" it is considered greifing (did i spell that right?).

I have been temp banned for something along these lines "MinerMan"  Owner of Flintwood had me banned because i was harvesting in his farm.

Now this farm was unprotected and stated "public farm Take as much as you want" not members farm and also i think because he is a VIP his argument towards this is resulting in a one sided dispute.

What do you guys think of this ?

You griefed the farm you never harvested :L you destroyed seeds and door ways etc so stop lying :L the farm was only dirt and cobble and all seeds, crops and many lily pads was gone so pliz learn the rules and find out what is different from harvest and total destruction..
