I planning to make old classics like whack-a-mole, a combination guessing game and some aiming based ones.
With time and resources something close to a boardgame with dice rolls and events could be on the list.
(all the above would be supported by normal redstone, no mods required)

While game using mods/editors are fun and easier to get (install, paste the circuit, done) they are quite server intensive and of course they require to be installed on the server itself.

I've seen games of tag, gree light red light and such and they can be good, but they involve extensive use of command blocks and wouldn't really work with more than a few players at once.

Even if they added those in the event server, you'd need to take turns to play unlike the old Cube event where you "just" need to have no lag.

I think Spleef is my least favourite :P

or...OR...yeah i got nothing. LOL

Edit: BUT i remember this one time i made a single player world. i wanted it to be a multiplayer game, but no servers so...you know...pointless build. but the game was, there are 2 towers made of wool, and the towers have fire charge launchers. the goal was to burn the enemy towers, and find the gold block in said tower. while trying to make it past the defenses(dispenser shooting arrows and people on elevated platforms throwing splash potions of slowness/poison/weakness/etc. mainly slowness and people who will try to kill you with swords) get the gold block, run all that way back, climb some stairs behind you tower and put the gold block at the top of the stairs. oh and on the teams. only one person can grab the gold block, the designated gold block retriever. then there are persons who control the fire charge shooters and the arrow shooters and the potion throwers and people who use knockback 2  unbreaking 3 stone/iron(?) swords so no one dies. oh and everyone is wearing diamond armor as well. LOL

Checkers. As Harry said we have tested and it should work successfully. I think chess would be another cool game to add but that would be much more complicated. Maybe Twister! I'm just kidding lol but imagine how cool that would be! Maybe adding sniping contests with bows would be cool. Like hitting a target from a certain amount of blocks away.

Does that checker game calculate points automatically and restrict the moves to legit ones?
(basically: does the redstone prevent you from cheating?)

If not, chess isn't really much more complicated, all that is needed is to know the rules for each piece (something that a player is required to know anyway).

No redstone was used in this game. We are building it from carpets and wool purely. The board will be set up and rule boards will be set up next to it, as well as a chest on each side for conquered pieces and a chest for pieces that are king (solid wool blocks). I can show you a picture of it in a little bit

Oh ok it's a manual game then.

I don't think I need a picture I got what you mean.
The hardest part about chess in that case would be making the different pieces to actually look different.

For checkers you could also just use pistons for the tokens since you don't need to be fast and you just need 2 colors.

Yeah, but it was just easier to build it as a manual game. Plus, when you take a piece, it is permanently removed; its too hard to do that with pistons. Plus, you would need one piston for each color on each square, and we didn't design the board to be able to have two pieces on the same 3×3 square. Doing a board like you suggested would be cool but would be a huge pain in the neck, and the way our board is designed, it would be impossible to do something like that.
